cooking up some thunks.....
been thunking up some different ideas in the kicthen....have a ton of tomatoes, of varying kinds, that are coming out of the garden and making their way into the kitchen. I can only eat so many straight salads so what to do, what to....here's one using salmon burgers from the frozen seafood section of Costco (maybe the best buy in the store).....
chop up a bunch of tomatoes (I used red & yellow plums) and toss them into a saute pan - olive oil, salt, pepper, a couple of pinches of cumin, a pinch of ginger, a handful of chopped onion and some cilantro......saute down over a low heat - when the tomatoes have turned to a sauce take the 2 salmon burger patties and place them in the pan and cover.....turn in 5 to 7 minutes and spoon some of the mixture over the salmon burgers........in another 5 minutes flip the burgers and cover with slices of colby jack cheese - cover pan and turn off heat.....when cheese has melted - serve - would go well with something like yellow rice.......
or this......
bake a red pepper tortilla in a salad bowl pan until crisp - set aside......4 yellow & red plum tomatoes and 6 red, orange & yellow cherry tomatoes, 1 large carrot, half a red or yellow pepper and 1 celery stalk.....leave the tomatoes whole and cut the carrot, pepper & celery into chunks.......spray them with Olive Oil Pam and salt & pepper.....throw them on the grill and slowly roast them for 20+/- minutes - in the meantime, throw 2 chicken sausages (I used chicken & mango) on the grill and julienne a handful of iceberg lettuce......throw some shredded cheddar into the bottom of the tortilla bowl and add the lettuce - add chopped roasted vegetables - sprinkle with Tabsco Chipotle Sauce - add chopped hardboiled egg and sliced sauasage - top with Spicy Ranch Dressing and mix - enjoy.......
was at the driving range today slicing the hell out of my new rescue clubs when i realized the guy at the spot next to me was actually playing a full game - he would consult a yardage book, select a club, hit the shot, consult the yardage book, select a club and then aim for one of the flags in the range - if he landed it on the green he went back to his driver - if he missed the green, he broke out the sand or lob wedge........I wonder what course he was playing ??????
just watched Rounders - not bad but not the seminal movie that a person could be led to believe that it is - I'm not a poker player so that probably had a lot to do with it - at least now I will understand the references and be able to keep up in a conversation - glad I saw it......

no ipod song of the day but i do have to say that you should head over to CMT to catch Megan Mullins and her new video and her Studio 330 Session - and what a great series that is - deserving of it's own thunks at some point..........
I thunked that Robby Gordon was going to push his way through to victory in the Busch Series race at Watkins Glen this afternoon - a sign of things to come tomorrow ?
Haven't seen the NFL Network replay yet but I hear the Jay Cutler looked very good against the Lions - don't know about Mike Bell yet - let me know if you know.......need to get my 3 fantasy football leagues set up this weekend and I need to clean my desk........it's more fun splitting firewood.....
still having trouble with the thunk of Paris Hilton being celibate for a year.....Lindsay Lohan has a better chance of staying sober for a year......(cheap search engine ploy)
3 new "Losties" joining the cast but as for who & how - keep guessing.....
how out of touch was I to not know that Bon Jovi had a torrid affair with Diane Lane and that "You give love a bad name" was written about her......i still think she is smoking hot.........
started a Jimmy Buffett novel today but that was before I remembered that I have a James Lee Burke waiting in the wings - Jimmy may just have to wait.........
come back tomorrow when a try out another freeform new recipe - Cheesy Crab & Tomato Pie........
